Cheese Quiche

Recently my mom and I went to a cute little French restaurant tucked away in a shopping center that had the most amazing quiche I've had. The crust was flaky and the eggs were light and the cheese was just delicious, and I have been thinking of quiche ever since. Tonight I was craving french onion soup, which is such a simple quick thing to make, but it didn't feel like a complete meal. Adding a quiche was exactly what was needed. 
These are the kind of meals that I love the most. The ones that make me feel like I've been transported to some cute little rural french town, having a quaint little lunch. A girl can dream, right?

1 pie crust
artichoke hearts
1 onion
2 tablespoons butter
1 cup spinach
1/2 cup swiss cheese
1/2 cup cheddar cheese
8 eggs
a few sliced grape tomatoes
salt to taste
pepper to taste
1/2 cup milk or cream

Take your pie pan and add your crust to the bottom, lightly pressing it against the sides and bottom of the pan. Slice your onion paper thin and sautee in 2 tablespoons of butter, until translucent. Add your artichoke hearts and spinach at the end, and sautee for one minute. Add to the pie pan.
Now, whisk your eggs, salt and pepper in a bowl and whisk in your milk or cream. Next add your cheese, and add to the pie pan, stirring all ingredients together.
Put in oven at 400 degrees for about an hour.

Your quiche should be custard like in the middle, and only slightly wiggly. If it's very wiggly its not finished cooking.

  2. This was really delicious. I didn't have room for all the egg mixture. I think 6 eggs would have been plenty. Also, the quiche was done after about 35 minutes. At 400° I would start checking it at about 30 minutes. I'm glad I checked it when I did because it was was very dark and completely done. It was a great recipe though and I will definitely make it again.
